Miso Soup
serves-Makes 1 large soup bowl, or 2 smaller
Ingredients
400mls boiling water
1 tbsp dashi stock powder,
I use this one
1 1/2 tbsp white miso paste
A large pinch of dried wakame
100gr soft silken tofu, cut into cubes
1 spring onion, green parts only, sliced
Method
In a pan, simmer the water and add the dashi stock powder, stirring well. Add the wakame, and simmer for 2 minutes.
Then add the tofu and any other vegetables to the pan to cook if you're using them.
Add a little of the stock to your bowl with the miso paste in it, and stir to loosen.
Add to the pan of stock, and then dish it up.
Make sure you don't boil the miso as this can alter it's flavour, and also kill some of the health benefits.
